The Unwritten O’ was inspired by my Irish heritage. In 1926, Thomas O’Connor immigrated to New York City from Ballyhaunis, Ireland. During the immigration process, his last name O’Connor was changed to Connor, dropping the “O’” permantely. Nearly 100 years later, his great-granddaughter is restoring the “O’” with a traveling pub, giving birth to the name “The Unwritten O’.”
My family has a long-standing tradition of enjoying Guinness and watching football, especially Notre Dame’s Fighting Irish. I’ve also noticed that American football is working to attract European markets. College GameDay has been hosted in Dublin in recent years, drawing in Irish crowds and inspiring my idea for a traveling pub. I want to combine American tailgating with Irish culture by creating a “half-pint” pub that can travel to college football games, rugby matches, or simply to provide a space to relax and watch sports on multiple TVs outdoors. The pub will feature a full bar and an Irish-inspired menu, offering everything needed to enjoy the game with an Irish twist.
